I wanted to use the leftover zucchini scrapes I took out from zucchini boats.
Serves 2 to 3
Prep time 20 to 25 min
Ingredients:
Spinach 1 bunch cleaned and roughly chopped
Tomato 1 roughly chopped
Carrot 1 small
Zucchini 1 cup (in my case I used the scrapes left from zucchini boats)
Green chili 2 (optional)
Ginger root 1/4 inch
Salt 1 tsp (or to taste)
Black pepper powder 1/4 tsp
3 cups of water
Preparation:
Add all the vegetables with salt and 2 cup of water in a pressure cooker and cook upto two whistle. Leave it for 10-15 minutes for the pressure to subside by itself.
Blend them in a blender and pour it in a pot. At this time use 1 cup of water to rinse the blender and add to the pot, boil for 2 minutes. Add pepper powder, mix and taste to adjust salt.
Serve it hot.
